Coconut cake with white chocolate recipe

450g flour
2 large eggs (separate yolks from the whites)
230 g sugar
120 g butter
350 g grated coconut
120 ml oconut milk
120 ml milk cream
10 drops vanilla extract or 1 packet of vanilla sugar
60 g white chocolate
½ tablespoon baking powder
¼ teaspoon of baking soda
a pinch of salt


250 g cottage cheese
75 g butter
150 g grated coconut
230 g icing sugar
40 g chocolate white
5 drops of vanilla extract or 1 packet of vanilla sugar
cream and coconut milk to taste


In bowl beat egg yolks and sugar to form the foam. Add softened butter, grated coconut and white chocolate, coconut milk, cream, vanilla extract or vanilla sugar, a pinch of salt. In another bowl, whip the egg whites until stiff and stir into the mixture together with flour (in which you have previously added baking powder and baking soda – mix well the flour, baking powder and soda). Pour into the tin and bake for about 45-60 minutes in a preheated oven at 355°F (170 В°C). Meanwhile, prepare the cream cheese, butter, powdered sugar, coconut and grated white chocolate and vanilla extract or vanilla sugar. Adjust the consistency with cream and coconut milk. The cream should not be too
liquid. Let stand in refrigerator. When the cake is baked, the oven and let cool thoroughly, cut into three layers. Wet each layer with coconut milk. Stuffed with ricotta cream and butter previously prepared, sprinkle with coconut and grated white chocolate. Decorate your choice. Keep in the fridge.
